Cistercian monks first settled in Wensleydale in 1150, bringing their unique cheese recipe with them. Except for a brief period in 1992, the cheese has been produced in Wensleydale ever since. Wensleydale Creameries have a museum with displays about the history of the cheese and a viewing gallery where you can see the cheese being made.
